Vishu Sadya
No Kerala festival is complete without the grand Sadya, and the Vishu Sadya is a spectacular culinary affair. Served on a fresh, green banana leaf, this extensive vegetarian meal encompasses all flavors—sweet, sour, salty, and bitter—symbolizing the different experiences one will face in the upcoming year.
A unique dish prepared specifically for this day is the 'Vishu Kanji', made from rice, coconut milk, and spices. Another specialty is 'Vishu Katta', a savory cake made from rice powder and coconut milk, often served with jaggery. The feast also includes classic Kerala dishes like Aviyal, Sambar, Pachadi, and concludes with the deeply sweet Payasam.
